Mango Salsa

This sweet, chunky salsa makes a great appetizer or chicken garnish. Mangoes are a colorful, flavorful, and juicy addition to salsa. An interesting contrast in flavors occurs when mango is mixed with lime juice. This is the best time of the year to make your own salsa.

Ingredients:

1 mango - peeled and chopped
1/4 cup finely chopped red bell pepper
1/2 sweet onion, chopped
2 tablespoons chopped cilantro or green onion
2 tsp lime juice
2 tsp lemon juice
1 fresh jalapeno chili pepper or a dash of cayenne pepper
Salt to taste

Peel mangoes and dice em.

Cut all ingredients into cubes. Mix with salt, lime and lemon juice.
I skipped on the chili peppers. Just added a few dashes of cayenne pepper. It makes about 2 servings or 1 large one:) Enjoy with your favorite chips :-)
