This recipe for Chocolate Mayonnaise Cupcakes is so delicious even to the next day, if any left.
1 cup mayonnaise (I used Best Food)
1 teaspoon baking soda
1 tbs vinegar
2 ounces dark chocolate ( I used 72%), coarsely chopped
2/3 cup dark unsweetened cocoa powder
1 1/3 cup boiling water
2 teaspoons vanilla extract
1 cup sugar
2 large eggs
2 cups flour (sifted)
1 1/2 stick unsalted butter, softened at room temp
3 oz cream cheese at room temp
6 oz cool whip
4 oz sweet condensed milk
Cream directions: Cut butter into cubes. Mix until fluffy. Add cream cheese. Mix until becomes smooth. Add cool whip. Mix more. Add condensed milk. Mix until all combined.
Take out butter and cream cheese let it softened.
Combine eggs and sugar and beat with an electric mixer set at medium-high speed until light and fluffy.
Measure 2 oz chocolate.
Chop chocolate into a small pieces.
Pour the boiling water over the cocoa powder and chocolate. Whisk until smooth. Set the it aside.
Add baking soda, pour vinegar on top of fluffed eggs.
Add mayo, mix.
Add half (1 cup) of flour, mix on med.
Pour chocolate mix while mixing on med-low. Then add remaining flour. Mix on med until all flour is incorporated.
Pour into baking cups. Bake o 325 F, for 25 min or until tooth pick comes out clean. Make cream, color as desired. Cool down cupcakes completely before frosting em.
