Raspberry Marshmallow "Zefir" (Зефир)

This is Russian traditional dessert. Easy, air delicacy, made ​​by whipping egg whites with sugar and added agar syrup. Great for parties, weddings. It's easy and fast to make, in less than 1 hour.

Ingredients:
5 Egg Whites
1 cup + 3 oz Water
1 Small pack Jello (Any flavor; My favorite is apricot)
3 heaping tsp Agar-Agar ( You can  order here)
3 1/4 cups Sugar {Updated} Organic sugar is ok to use
1 to 2 large Lemons
Powder  sugar for sprinkle on top 

I made it with fresh raspberries and black currant puree. You can skip the Jello and water and add up to 3/4 cup of fresh berry puree (discard seeds). And you can use organic sugar.


 Tools needed:
24 inch Pastry bag  (I bought this bag and tip at Cash and Carry)
Star Pastry Decorating Tip 
Kitchen Aid Mixer, hand mixer works too.

This kind of Agar-agar works great. Asian stores sell it or you can order here. If that link expires click HERE.
First make jello with 3 oz boiling water. You can use any flavor, my favorite is Apricot.
Squeeze the lemon juice in the cup. Put it aside. 
Put egg whites in a mixer start to mix on slow then gradually add speed.At the same time start making agar. Pour 1 cup of cold water in the nonstick pot. Add agar. Mix, turn on high constantly mixing. Whet it comes to a boil turn on med and boil for 2 min. Then add sugar gradually and mixing constantly. Boil for 2 min 


Egg whites should be very fluffy by this time. Turn mixer on slow and pour boiling agar in it. 
Add lemon juice.
Add jello while mixing on med. Turn mixer on high. Mix for 5 min.
Get the table ready with plastic wrap or aluminum foil.
It should be thick. Put it in the pastry bag.
Start making circles with the tip of zefir.
Sprinkle powder sugar on top. Let it cool down for 20 min. 
It makes about 40 zefirs. Then stick 2 half's of zefir together. 
          Enjoy with coffee! It just melts in your mouth:)












To make white zefir: just skip the jello and water  part and add your favorite flavor to it. I love this Amyl Acetate flavor the best. It taste like  Russian dushes candy. It is sold at Asian stores:)

    1. Gelatin will not work in this recipe. You can skip jello in it but not agar-agar.

  14. This zefir looks beautiful! I'll definitely have to try this recipe. I usually make mine simply with a bit of lemon juice, but I've always wanted to try some other flavors. I love your pictures too.

  18. I made them today, and they turn good, do you think its possible add less sugar? and other ?, how would you recommended to do smaller batch size, and mom told me to try to make a cake like basik buskvit and on top put this zefir, so I dont know, any body try this?

    1. Yes, I put 3.5 cups sugar sometimes. I never tried to make less, just make half of recipe. For the cake, make "Birds Milk Cake" it's same like zefir but more juicier.

Lea made this zefir ( third time) and this time my zefir turn nemnowko more liquid than last time, even first and second time y menya krem ne takoj gystoj bul kak y tebya, dazhe ne znayu what wrong i did .... vot y tebya na foto belki smotritsya chelaya bowl, my look not really fluffy (like vuxodit gde to half of bowl (mixer) ), tell me what I did wrong ? thank you so much

    1. There is a few things may be wrong. I figure out that the fresh eggs are more fluffier m (that means as soon as a buy eggs I make zefir) and it needs to be very cold (bowl and eggs). When you start mixing egg whites start on low and every few min add speed. And agar agar has to be in a small pack like in the picture Best quality or Telephone brand will only work for zefir. I hope this helps:)

  25. Hi,

    I made zefir and it tasted awesome but I ended up feeling the sugar bits in there...like it didn't melt maybe? Why could that be? Should I mix sugar in slower?

    1. Hi Natasha
      Sometimes jello would not melt all the way, I put it in the microwave. When you put sugar in (I add 1 cup at the time until it melts), boil for 2 min. It should be melted all the way. Did you watch the video? That maybe helpful.

    1. For zefir I use Ateco 827 tip from cash&carry. Wilton 1M will work too, it's a little bit smaller.

The only thing is that I had jello from Ukraine so it did not turn out so colorfull, but still so good. Thank you once again for your hard work.

  32. Not having the Kitchen Aid mixer, I wonder if you can tell me how big that bowl is? I'm guessing the impression that even a slightly smaller bowl might result in a sticky disaster.

    Side-note: Have you tried Zefir brand agar? I've had a lot of luck with it, but I've been curious as to how other people compare them to other big brands, such as Telephone.

    1. I am not sure what the size is of the bowl. I think about 5 quarts. I never seen a zefir brand agar. The agar brands I use workes perfectly for my recipe:)))

  33. I tried this recipy today: The "dough" became very "sticky", I had to wait about 30 min. before placing it to "pastry bag" and even after that ZEFIRs did not keep the nice form. Any how they were very tasty, but "not beautiful". Also it was difficult to take them off plastick - I had to use a knife. What could be wrong? (I speak russian, so the answer can be in any language). SPASIBO: KIRA.

  35. Just made it this weekend and my daughter ate, no kidding, half of it in two days. :) I was wondering if you know how to make it with apples (apple sauce). I guess its just the plane white one. I figured since she is eating so much of it, it might as well contain something of nutritional value. We used Cherry flavored Jell-O and I did not like the flavor, but everyone who has tried it, loved it. I will also have to try it with Strawberry or Raspberry. Cherry had a very strong artificial taste. Thank you for such a great recipe and video.

    1. I haven't made cherry flavor before. I like strawberry, raspberry and apricot best. I never made zefir with apple sauce ether but this is a great idea. I will experiment with it, I would add about 1/2 cup of apple sauce. Happy to hear about my hit recipe. Thank you for letting me know:)

    1. You can leave these out, not covered. It will get a little dry on top. Or if you like em soft, then cover it.

    1. You can make these like up to 5 days ahead. First leave zefir to dry to how you like it, then store it in a dry place in covered plastic container. Enjoy!
